Weekend Lunches

Peanut Butter and Chip Sandwiches
Two slices of bread
Peanut Butter (Smooth)
Chips (Crisps) any flavour
Spread peanut butter thickly on a slice of bread. On top, place the chips (nice and thick too). Place the 2nd slice of bread on top and mash down with the heel of your hand. Eat.
Hmmmm! Tasty.

Soup and Soldiers
A can of Cream of Pumpkin Soup
Milk
Two slices of bread
Margarine
Open the can of soup and pour into a saucepan. Fill the empty can with milk and add it to the soup (for additional creaminess). Heat until it just simmers, stirring all the time to remove any lumps. Do not boil lest you burn the milk.
Toast the bread and smother with margarine. Cut the toasty into 'soldiers' around 1/2 an inch wide.
Pour the soup into a wide bowl, place the toasty soldiers onto a plate. Eat by dipping the toasty soldier into the soup and then alternating with a spoonful of soup.
On a cold winters day, nice.

Banana Sandwiches
Two slices of bread
A banana (a soft banana does better than a firm one)
Optional: Sultanas or raisins and cinnamon
Peel the banana and slice it into a bowl. Using a fork, mash it until it is a nice thick paste.
Spread onto one slice of bread and then place the 2nd slice on top. Mash together with the heel of your hand.
Optionally, add the cinnamon and sultanas or raisins to the banana as you mash.
Beautiful.

Bacon Crackers
A couple of slices of bacon (no need to remove the fat unless you need to)
A ripe tomato (but not too squishy)
A packet of Salada or Clix crackers
Margarine
Turn on the griller.
Spread the crackers with a little margarine.
Slice the tomato (not too thin) and place a piece on each cracker. It's OK if you go over the edge of the cracker.
Slice the bacon and place a small piece top of each piece of tomato.
Place the crackers on a tray and slide them under the griller.
They are done when the fat from the bacon starts to 'pop'.
Hmmm. Haven't had these in years. Must try them next weekend.

Baked Beans on Toast
A can of baked beans (preferably Wattie's, they are smoked with something that makes them irresistible)
Two slices of bread
Cheese (hard or sliced)
Margarine
Pour the baked beans into a saucepan and warm over a slow heat being careful not to let them boil.
Toast the bread in a pop-up toaster and smother with margarine.
Place the cheese on top and put under the griller.
When the cheese is bubbling nicely remove from the griller and place on a plate.
Pour the warmed baked beans over the top and leave for 30 seconds or so for the bean sauce to melt into the cheese.
Enjoy.

Ham, Cheese and Tomato Toasted Open Sandwiches
Two slices of bread
Four slices of shaved ham (honey ham is fantastic)
Ripe tomato (but not too squishy)
Cheese (hard or sliced)
Margarine
Salt and Pepper
Toast the bread in a pop-up toaster and smother with margarine.
Place a layer of ham on each slice of the toast (to stop the tomato making the toast soggy).
Place a layer of sliced tomato on the toast.
Another layer of ham.
Another layer of tomato and to this layer, add salt and pepper to taste.
Place the cheese on top and put under the griller.
When the cheese is bubbling nicely remove from the griller and place on a plate.
Eat and beware the burning cheese on the roof of your mouth. Ouch!
